- Companies that are new to LIN, (liquid nitrogen), freezing would like to see how their particular product holds up to nitrogen freezing. With an inhouse test Duane arranges for a small test chamber to be shipped to the site. These test chambers, (roughly 2ft wide, 2 ft deep, and approx. 4.5 feet high), are easily transported and run on 120 vac. The second step is to order a 180 or 230-liter Dewar of low-pressure LIN from a local source. An in-house test is very beneficial for Quality Control for several reasons. Measure yield gain, taste enhancements, shelf life test, etc.
- Duane personally likes to utilize a test chamber to validate the freezer sizing process. Many people that he has encountered over the years have bought a nitrogen freezer that ended up not the right size for the production throughput they plan on freezing. Under sizing and oversizing a freezer will add waste to the overall consumption ratio. There are programs for sizing a freezer, but what he has found is that they are not always correct. For him to recommend a specific freezer he must always use the actual numbers that he gets from freezing the product to the specifications of actual production, (Temp in > Temp out), which is obtained from an onsite test.
